Poolside Crostini

Directions

1Heat oven to 325 degrees.

2Line cookie sheet with foil.

3Place bread slices on lined sheets; spray lightly with nonstick cooking spray.

4Bake for 6-9 minutes or until crisp.

5Cool on a wire rack.

6Finely chop artichokes.

7Combine artichokes, tomatoes, basil, salt and pepper. Mix well.

8Serve tomato mixture with bread slices.

Ingredients

32 slices baguette slices, 1/4 inch thick

6 ounces marinated artichoke hearts, drained

2 cups Italian plum tomatoes, finely chopped

2 tablespoons fresh basil, chopped

1/2 teaspoon salt

ground black pepper
