Oven Roasted Pork Roast

Directions

1Heat oven to 450.

2Generously spray roasting pan with cooking spray. Place meat in pan.

3Place carrots, potatoes, and onion around roast.

4Drizzle oil evenly over meat and vegetables; sprinkle with rosemary, sage and pepper.

5Bake uncovered for 30-40 minutes until meat thermometer registers 165 and vegetables are tender.

6Stir vegetables occasionally.

Ingredients

1 1/2 pounds boneless pork loin roast

1 pound carrots, cut 1 inch thick

2 pounds potatoes, halved and wedged

1 medium onion, cut in wedges

1 tablespoon olive oil

2 teaspoons dried rosemary, stems removed

1 teaspoon dried sage, crushed

1/4 teaspoon pepper
