Mediteranean Lamb Chops

Directions

1Cut each chop away from the rack.

2Mix the rest of the ingredients.

3Marinate the chops for about 4 hours.

4Grill on a hot fire 2-3 minutes a side.

5Serve on a bed of fresh baby spinach and roasted tomatoes that have been tossed in balsamic vinaigrette.

1/2 cup olive oil

1/2 cup lemon juice

2 cloves garlic, finely chopped

2 tablespoons fresh marjoram or oregano, chopped

1 tablespoon dried rosemary

salt & pepper

2 racks lamb
