1Cook potatoes until tender. Let cool slightly, peel and chunk, mashing some to measure about 1/2 cup.
2Melt butter in medium saucepan over medium-high heat. Whisk in flour and cook one minute. Stir in milk. Cook, stirring frequently, until thick and bubbly, about 8 minutes. Add salt and pepper to taste.
3Add mashed and chunked potatoes and cook until potatoes are heated through, about 2 minutes.
4Dish soup into serving bowls and garnish with cheese, bacon bits and sour cream.
