Date Pinwheels

This was the recipe of Joy Armstrong's grandmother.

Directions

1Combine dates, water and sugar. Cook until thick, about 2-3 minutes, stirring constantly. Cool.

2Cream butter and sugars. Add egg and vanilla. Combine dry ingredients and add to creamed mixture. Mix until smooth. Cover and chill dough.

3Divide dough in half. Roll first half on floured surface to 1/4 inch thick. Combine date mixture with 1 cup chopped nuts. Spread 1/2 of filling on dough. Roll lengthwise like a jelly roll and wrap in wax paper. Repeat with rest of dough and filling. Chill until firm.

4Cut into 1/4 inch slices. Place on lightly greased baking sheets. Bake in 375 degree oven for 8-10 minutes.

1/2 cup water

1/2 cup granulated sugar

1/2 cup butter

1/2 cup granulated sugar

1/2 cup brown sugar

1 egg

1/2 teaspoon vanilla

2 cups flour

1/2 teaspoon soda

1/2 teaspoon salt
