Creamy Corn Chowder

Directions

1Saute onions, celery, and red pepper in butter (8-10 minutes). Add corn and cook 2 more minutes. Add seasonings and stir. Cover, reduce heat, and cook 5 to 10 minutes. Add stock or water and simmer for 10 move minutes. Remove half the contents, blend or puree, and return to the pot. Turn off heat and add milk.

2 tablespoons butter

1 cup onion, chopped

1/2 cup celery, chopped

1 red bell pepper, chopped

4 cups fresh or frozen corn

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 teaspoon dried basil

1 cup stock or water

1 cup evaporated milk
