Directions

Salad

1Combine the cabbage, carrots, apples, and onions in a large serving bowl; cover and chill as long as long as 2 hours.

Dressing

1Stir together the yogurt, mayonnaise, vinegar, sugar, & tarragon. If made ahead, cover and chill as long as overnight.

Assembly

1To serve, pour dressing over cabbage mixture, mix to blend thoroughly. Add salt & pepper to taste. Blend again.

1 small head red or green cabbage, finely sliced

2 large carrots, peeled and grated

2 medium apples, chopped into small pieces

4 green onions, thinly sliced

Dressing

1 cup unflavored yogurt

1/4 cup mayonnaise

3 tablespoons white wine vinegar

1 tablespoon sugar

1/2 teaspoon tarragon leaves
