Cold Blueberry Soup

Directions

1In medium saucepan combine blueberries, water, sugar, lemon peel and cinnamon stick. Bring to a boil; simmer 15 minutes.

2Cool 10 minutes, remove lemon and cinnamon. Pour into blender and puree.

3Chill at least 4 hours or overnight.

4Just before serving, stir in sour cream.

1 pint blueberries

1 1/2 cups water

3/4 cup sugar

1 3 inch strip lemon peel

1 2 inch piece cinnamon stick

3/4 cup sour cream
