Baked Shredded Sweet Potatoes

An easy way to fix sweet potatoes either in the oven or microwave.

Directions

1Preheat oven to 375 degrees. Combine oil and garlic in a 9-inch pie plate; place in oven while it is preheating. Remove pie plate from oven, add sweet potatoes, salt and pepper; stir well to coat potatoes with oil. Bake in preheated oven for 20 minutes or until tender, stirring once.

Microwave directions:

1Use a small garlic clove instead of the larger one.

2Stir together oil and garlic in microwave-safe 10-inch pie plate. Cover with wax paper. Microwave at 100% power for 2 minutes. Stir in sweet potatoes. Cover with wax paper. Microwave at 100% power for 5 minutes, stirring once. Let stand 1 minute. Stir in salt and pepper.

1 tablespoon olive oil

1 large garlic clove, crushed

1 pound sweet potatoes, peeled and shredded

1/2 teaspoon salt

1/8 teaspoon pepper
