Lemon Loaf

A simply, yet delicious lemon loaf to be served anytime of the day. Pairs wonderfully with fresh fruit.

Directions

Loaf

1Grease a 9 x 5 " loaf pan

2Beat eggs and sugar together.

3Add yogurt and oil.

4Whisk in lemon juice and zest.

5Combine dry ingredients and add to egg mixture. Mix together until just incorporated.

6Pour batter into loaf plan. Bake in a 350 degree oven for 50 minutes or until done.

7Remove from oven and let cool, then remove from pan

Glaze

1Whisk powdered sugar and lemon juice in a bowl.

2Pour over cooled cake.

Store in refrigerator.

1 1/2 cups flour

1 cup sugar

1 cup plain Greek yogurt

1/2 cup vegetable oil

1/3 cup lemon juice

3 eggs

2 tablespoons lemon zest

2 teaspoons baking powder

1/2 teaspoon salt

Glaze

2 cups powdered sugar

4-5 tablespoons of lemon juice
